Sauteed Spinach and Peppers with an Egg

I eat eggs like they are going out of style. This is a super simple dish, and it only takes about 10 minutes to throw together. 

Ingredients: 

1 egg
1 double handful of spinach
1 tbsp olive oil or oil of your choice
Tony's Creole Seasoning
1/2 bell pepper, any color, cut into strips
1 tbsp sharp cheddar cheese, shredded
Step 1: Add olive oil to a skillet and turn to medium heat. 

Step 2: Add  bell peppers and sautee for about 2 minutes. Then, add spinach and sautee until slightly wilted. Put spinach and peppers onto a plate or in a bowl.

Step 3. Fry the egg. I like mine to be over easy, but sunny side up is the prettiest. Cook it however you like it! In order to achieve the pretty egg in the picture, fry the egg on high for a minute and add a few tablespoons of water and cover with a lid until the top is cooked a bit by the steam. 

Step 4: Put the egg on the bed of spinach and peppers, sprinkle with cheddar cheese and Tony's, and enjoy!
